Inspired by traditional Kyoto cuisine and the interplay between umami (savoury with a rich mouthfeel) and kokumi (intense, lingering taste) — known as the “fifth” and “sixth” tastes after sweet, salty, bitter and sour — Sagano Head Chef Chris Chan joins forces with restauranteur and Exotica Umami (Ex M) sauce creator Dan Gan, and JW Marriot Executive Chef Tony Wong to present this unique dining experience. This decadent showcase celebrates the remarkable capabilities of Ex M sauce.

Created from a 2000-year-old Roman recipe, Ex M sauce has been widely recognised for its incredible ability to enhance both the flavours and textures of any meat and dish. It is the heart of this tantalising menu, elevating each creation with exceptional complexity and an unforgettable finish.
